how do I know what I play against?

Iv'e got a few decks together (resurrect Priest, Wall priest, Pogo Rogue etc,) and read the help about best way to  play them. However they all say do this or do that if your against a control deck or an aggro deck or whatever...

So......How do I Know what type of deck my opponent has ?

I have no idea when I'm playing, though I do recognise a Wall priest or Pogo or other type of deck eventually( and some I still have no clue about), but then It could be too late!

Is it just simply experience ? or are there signs when the opponent plays ?

Go to some stat site, check the tier list and assume it's (a variant of) the highest deck for the class you're facing. It's a sad truth that people will netdeck and use the best classed one(s).

After that, it's always a gamble. But it pays off more often than not.

Mulligan can help a tiny bit. If it is a deck with many proactive, low-cost cards (mostly aggro decks), then it will usually keep more cards than a deck that has more high-cost cards that are not playable straight away (mostly control or combo decks). This is not something to rely on, as aggro decks can get a bad mulligan while control decks might get lucky, but after all this info is the reason mulligan was changed so that you do not see the other person's mulligan before you have completed yours.

Ok, so in principle you can't tell - however given people try to play the same or similar decks that are highly rated, then that's a best guess scenario.
