Best Enchants, Gems and Consumables for Protection Paladin
Mists of Pandaria a relatively straight forward expansion when it comes to Enchants Gems and Consumables. There are a number of ways to gear your Blood Death Knight in Mists of Pandaria depending on the content you are doing and your confidence in your groups ability, highlighted below is the safest option to ensure maximum survivability.

The Rune you chose to put on your weapon depends on the encounter and your tolerance to the damage you are taking.
Rune of the Stoneskin Gargoyle will be a bit better in situations where the majority of your incoming damage is Magical.
Rune of Swordshattering is another great choice in a situation where the majority of the incoming damage is Physical.
There is also an argument to be made for
Rune of Cinderglacier if you are confident in your ability to survive an encounter.
Cinderglacier greatly increases the damage of quite a few of our abilities and a well timed proc can lead to a huge DPS increase.
Rune of the Fallen Crusader is the most balanced option by increasing our Strength both increasing our damage dealt and our chance
to Parry.

While your focus is primarily on stacking as much Mastery and Stamina as we can, if you find yourself close to your Hit/Expertise caps consider swapping some of these gems to achieve these if it is not able to be done by Reforging.
Consumables
Food
Your best food choice as a Blood Death Knight depends entirely on the type of damage you are taking. Strength Food
will be preferable on any encounter where the majority of your incoming damage is Physical. In a situation where
most of the incoming damage taken is Magic you will want Stamina. Listed below are the best options for both Stamina
and Strength if you find yourself without a
Pandaren Treasure Noodle Soup.

Black Pepper Ribs and Shrimp
Fluffy Silkfeather Omelet
Flasks and Potions
As a Blood Death Knight we will use
Flask of the Earth.
Potion of the Mountains which greatly increases your armor for 25 seconds. This can be used as a smaller
defensive cooldown against Physical damage. If you find yourself in a situation where your focus is on dealing
damage than consider instead using a
Potion of Mogu Power for the Strength bonus.
Master Healing Potion is a quick burst of healing that may allow you to survive damage that would
otherwise be deadly so its important to always be ready to use this as an impromptu defensive cool down. This unfortunately
will scale quite poorly as a Tank so really only use this in life or death situation.
