Alchemy in Dragonflight
As has been the case since the start of World of Warcraft, Alchemy will be responsible for creating most of the consumables used in the end game, as well as some rare materials, through transmuting.

Alchemy is also one of the few professions that provides combat bonuses, in the form of healing / speed bonuses when using a potion, longer duration phials (30 min from Phial Mastery and another 30 min from Air or Frost Phial specializations), and lower health loss from using Toxic consumables.
Dragonflight introduces Crafting Specializations, which you are able to unlock once your profession skill hits 25. These serve as a profession talent tree system fueled by Alchemy Knowledge, obtained from weekly quests, one-time treasures in the Dragon Isles, Draconic Treatises, and first-time crafts.
While you will eventually be able to unlock all talents, doing so will require a long time as the sources of knowledge are very limited, especially once one-time treasures and first-crafts are exhausted.
Besides short duration combat potions, such as Elemental Potion of Power,
Alchemists can also make long duration phials, such as
Phial of Elemental Chaos.
They can also specialize into Decayology to learn about Toxic potions and
phials, such as
Potion of Withering Vitality.

Alchemy Stone trinkets can also be crafted for yourself and other non-Alchemist players with Crafting Orders and grant either increased duration on phials or reduced cooldown for your combat potions:

Best Class for Alchemy in Dragonflight
Due to its PvE combat personal benefits, Alchemy is an excellent choice for any character that cares about min-maxing its Raid and Mythic+ performance.
It also goes well on Goblin characters due to their high racial bonus, but for the most part you will want to have it on whatever character(s) you play the most.

Best Alchemy Specializations and Talents in Dragonflight

Alchemy Specializations are divided into three disciplines, each with 5 sub-specializations within which can be unlocked as you put points into their pre-requisite disciplines, akin to talent trees.
The best specialization for you depends on what your goals are: are you looking to maximize personal benefit for Raiding and Mythic+, Potion / Phial mass production, betting on Experimentation, Reagent and Incense mass production, or do you just want to do daily Transmutes as efficiently as possible? Each tree has its own unique perks which can help you reach these goals.

Potion Mastery is all about Potion mass-production and experimenting to discover new potion recipes.

Best Alchemical Theory Talents
Alchemical Theory is responsible for most of the reagent and incense crafting optimization and also contains many of the personal benefits available to the profession, as well a dedicated transmute node.
Making Gold with Alchemy in Dragonflight
Ideally, Alchemy allows you to convert cheap materials into expensive potions,
phials, and other products such as the new Sagacious Incense, but due to
its commodity producing nature it is very likely that the consumable market will
quickly get loaded with potions that are only marginally more expensive than the
materials used to create them. High quality Alchemist Stones should have better
margins but be harder to sell, as they require you to go through the Crafting
Orders system.
